- 1 ½ lb large shrimp, peeled and deveined
- 2 eggs
- ¼ tsp black pepper
- ½ tsp salt
- 2 cups shredded, unsweetened coconut
- Coconut oil for frying
Directions: In a shallow bowl, whisk eggs with salt and pepper. Put shredded coconut on a plate. Dip each shrimp in eggs, then press all sides in the shredded coconut. Pour enough oil to cover ½ inch in a large skillet over medium-high heat. Fry shrimp in batches until they are golden, about 3-4 minutes. Enjoy with your favorite dipping sauce!
