210 Recipe of the week -Sweet Potato, Spinach and Bacon Quiche

  • 4 sweet potatoes, sliced thin
  • 5 eggs, beaten
  • 2 cups fresh spinach
  • 3 bacon slices, cooked and crumbled
  • 1 onion, sliced
  • 1 garlic clove, minced
  • 2 tbsp fresh chives
  • 2 tsp olive oil
  • Cooking fat
  • Salt and pepper

Directions: Preheat oven to 400. Arrange potato slices in a pie dish to form a “crust”. Drizzle olive oil over the potato slices and season with salt and pepper. Bake for 15-20 minutes. Meanwhile, melt cooking fat of choice in a skillet over medium heat and add garlic and onion. Cook until soft, about 5 minutes. Add in spinach and sauté for 2-3 minutes and set aside. When potatoes are done, lower the oven to 375. Combine eggs with spinach mixture, bacon and chives in a bowl, and pour over potato crust. Bake for 30-35 minutes, or until the eggs are set.
