210 Recipe of the week – Paleo Mini Meatloaves



  • 2 lbs ground beef and/or pork
  • 10 oz frozen, chopped spinach
  • 1-2 tsp oil
  • 1 medium onion, finely diced
  • 2 carrots, grated or finely diced
  • 4 eggs, beaten
  • 1/3 cup coconut flour
  • 2 tsp salt
  • 2 tsp pepper
  • 2 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • ¼ tsp grated nutmeg

Directions: Preheat oven to 375. Thaw spinach and squeeze out excess water. In a pan over medium heat, add oil and sauté onions and mushrooms until onions are translucent. Set aside to cool. In a large bowl, combine meat, spinach, carrots, mushroom/onion mixture, eggs, coconut flour and all of the spices. Using hands, combine but don’t overmix. Fill 18 muffin tins all the way to the top (grease pan if using lean meat). Cook for 20-25 minutes, let cool and use a knife to loosen the edges before removing. Top with marinara sauce or mashed sweet potatoes!
